Prawn Toast

I haven’t eaten actual prawns in over 17 years and tbh, I never really liked em. Once exception to my distaste for prawns was of course, prawn toast because when you slap them on bread, cover them in sesame seeds before cooking, magic happens.

Now that vegan prawn alternatives are more readily available in Australia (try Woolworths or your local Asian grocery), I thought I’d take a stab at this crowd pleasing favourite using either the oven or an air fryer!

Ingredients

  • 300g vegan prawns, defrosted
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 2 teaspoons white pepper
  • 1 tablespoon caster sugar
  • 2 tablespoons water
  • 2 tablespoons peanut oil
  • 2 spring onions, finely chopped
  • Spray oil (optional, see note)
  • 12 pieces old white bread, crusts removed
  • 3/4 cup sesame seeds

Note: If you’d like to add a little more moisture to your prawn toast, give your bread a coating of spray oil before adding the prawn mixture.

Method

  1. If you’re going to use an oven, line a large baking tray with baking paper and preheat your oven to 180°C (if you’re air frying, jump to step 2.)
  2. In blender or food processor, combine the prawns, ginger, garlic, salt, pepper, sugar, water and peanut oil and blend until smooth before mixing through the spring onion.
  3. Cut each piece of bread into 4 triangles. Gently press about 1-2 teaspoons of prawn mixture onto each triangle, spreading out to the sides as neatly as possible and layering as much mixture on as you can (more mixture = less dryness when cooked!)
  4. Carefully press each piece into the sesame seeds (prawn side facing down) and spread out on a baking tray or your air fryer.
  5. Bake in the oven for 30 minutes or air fry for 20 minutes until the edges are golden (be sure to check regularly.) Serve warm with your favourite dipping sauce, spring onion and chilli.
